Treat yourself to this beautifully unique snack which is oozing with melted cheese. The cheese is enclosed within a fantastic golden brown coating made up of potato, eggs and an array of seasonings including garlic and onion. Deliciously simple and completely irresistible.
The balls can be fried or oven baked. We suggest using a mini muffin tray to make individual bites but bites can be fried in hot oil in a pan or wok.
Preheat oven to 180 degrees.
Grease a mini muffin tray. (this recipe needs two trays)
After squeezing excess water from the shredded potatoes in a clean tea towel place them in a bowl. Add the salt, garlic powder, onion and stir to combine.
Add eggs and grated cheese and combine.
Roll into balls between your hands and place into muffin tray (or just spoon into mini muffin tray) and bake for 20 – 25 minutes or until golden brown and tops and edges begin to get crispy.

80g grated cheddar cheeser
1 finely chopped onion (optional)
1/2 teaspoon garlic powder
