A bit about Maris Piper

This is a variety grown in Ireland mainly for the fresh chipping market. 

Maris Piper is available in supermarkets and greengrocers, but not all year round. Maris Piper has a golden brown skin and creamy white flesh, with a floury texture. 

The tubers are oval, sometimes extended and shallow-eyed.  Maris Piper has relatively high dry matter content, which is what gives them their fabulous floury texture. This makes them perfect for roast potatoes, which are best cooked by initially parboiling them to produce a textured surface, which in turn creates a wonderful crispy, crunchy outer roasted finish.

The best attribute of this high dry matter variety is that Maris Piper leaves a lovely crunchy outside, with a deliciously floury creamy middle for chips/roast potatoes etc.
